Minty Pea Dip

(Gluten Free, Vegetarian)

A quick and refreshing dip to enjoy during these hot summer days. Enjoy it with fresh vegetable sticks, crackers, oatcakes or anything you like!

So, who is feeling this heatwave? Me, me, me! I have lived here in the UK for 7 years and I never witnessed a day as hot as yesterday! The highest temperature yesterday was recorded to be 34 degree Celsius. And if you live in a city, like me, you will know that dealing with the heat is so much worse!

Needless to say, over the past week, I have enjoyed a series of cold meals and icy drinks. I decided to finally fill up my ice cube tray with water (something I never really do) and “created” a great amount of ice cubes to be used in smoothies, iced teas, juices, infused water, you name it, I’ve done it!

I think that the best part of dealing with hot temperatures is the fact that we tend to eat a lot more healthy. We end up craving those healthy and refreshing fruit and salads and often don’t feel like eating hot fatty food as much.  The other day, I was really craving some cold savoury snacks and because I find eating raw vegetables by themselves quite boring, I decided to quickly batch up this delicious dip to go with it. I love it, it has the word “summer” written all over. So refreshing and light, that it won’t make you feel guilty for eating the whole lot by yourself.

Most dips that you find in supermarkets are full of fats and not healthy in the slightest and if you like to eat dip with vegetables as opposed to vegetables with a dip, I’m afraid devouring half a tub of it is not the best idea.

It’s super easy to prepare too, all you need to do is to boil the peas until cooked and then transfer to a food processor and blend with all the other ingredients. I have used plain low fat yogurt, but if you want a higher protein option, feel free to use greek strained yogurt or Icelandic yogurt Skyr. I wanted to keep my budget low, so I simply opted for the plain basic yogurt.

Anyways, here is my guilt-free minty pea dip. I hope you enjoy it as much as I did!

Ingredients

  • 150g frozen peas
  • 10g fresh mint
  • 3 spring onions
  • 1 Tbsp extra virgin olive oil
  • 40g low fat plain yogurt (or strained Greek/Icelandic yogurt)
  • 1 1/2 Tbsp lemon juice
  • 1/2 tsp salt

Directions

  1. Cook the frozen peas in hot boiling water for about 4 minutes, until soft and cooked.
  2. Transfer the peas to a food processor, together with all the other ingredients and 1 Tbsp of water and blend until you reach the desired consistency. If it looks to stiff, try adding a bit more water.
  3. Let the dip cool down in the fridge and enjoy!
